So ... Odin in Toronto and Pallet Coffee Roasters in Vancouver made it onto the list of the 50 best coffee shops in the world (I don't think that the list is ranked) https://bigseventravel.com/2019/07/worl ... fee-shops/

There is a western Canadian supplier of greens in Calgary, AB. I have bought directly so do not know shipping charges but should be less than SM > Canada. Prices of the greens varies but the ones I tried were reasonable.

Yes, for proper light roast SOs you're looking at 1-2 weeks to degas post roast before pulling shots.

Has anyone tried the COLOMBIA LA PENSILVANIA SINGLE ORIGIN ESPRESSO from 49th Parallel? Sounds delightful...

The Burundi is excellent and my next volume purchase. This time around the Suga pop is an Ethiopian washed and natural blend which also works well as a drip / p.o. These are lighter roasted coffees with that je ne sais quoi, one tastes in great coffee. Not something that pairs well with cream for my taste.

My current bean (purchased online from www.cafune.ca), is a fantastic roast from Kaito located in Hudson, Québec. Their LOVE is a medium roast with nutty / chocolate flavours, makes traditional style espresso that doesn't get lost in milk based drinks.

I decided to try the Mexican Altura from idrinkcoffee.com in Milton, Ontario. I did a little search on HB and did not find much on high grown Mexican coffee. A quick web search yielded good reviews.
