Just received my Kg of GMC a couple days ago and this morning they're at 4-days post roast (roasted on 3/18). Just as a starting point I swapped them in with all the same setting parameters I had been using for a little lighter roast blend. As expected, the GMC pulled slowly (finer grind setting for the aforementioned lighter roast beans) so I pulled the 18g dose at 22g, [32-seconds, 203F, 10-second pre-brew (not normal for darker beans but I was just experimenting so...)] for a ristretto style shot and the flavors are on point with their description: Sweet, caramel, chocolate and nut. Delicious!

Per Caffe Lusso:
We recommend dosing about 18 grams of coffee with water hitting the puck at 203-205 degrees. With a total brew time of 26-32 seconds we love to see a net brew weight of about 32 - 36 grams. Our coffees are known for being very forgiving. We hear of folks that can go outside of those ranges a little and still have beautiful coffee result.
