I'm pretty new to MAKING my own espresso but have been enjoying them for a long time for various excellent cafes.
So far, I have found the Red Bird Blue Jaguar to be not only pretty forgiving but very, very delicious. Was the easiest espresso I have ever dialed in - the delineation of flavors between sour (underextracted) and bitter (overextracted) are really apparent, even to my amateur palate.
I'm on a bag that is 8 days past roast (had been stored vacuum bagged in the freezer since day three).
16g dose, 35g out in ~30-35 seconds, 199F temp
I found it is excellent without preinfusion, but adding preinfusion (4 seconds) made it even more mellow.
