Hi all - just purchased an A53 Lucca (vivaldi II) and Atom 75 and am loving it. I've pulled probably 100 shots and have gone through 4-5 bags of coffee learning. A few questions I was hoping this forum could help me on:

1) From what I've read, most people put "double" (18g) baskets in spouted and "triple" baskets (~21g) in bottomless. Anything wrong with putting a double in a bottomless?

2) From what I hear, 25-30 sec extraction is best. Does that matter the dosing? For example, if 20g and going for a 1.5 brew ratio of ~30g espresso, a good shot will be approx 25-30 seconds. What if I'm doing 16g for 24g espresso? Is the time the same? How about 16g for 32g espresso? What's the math behind it?

3) What's everyone's routine for when they open a new bag of beans? The reason I ask this, is every bag so far, after about 2-3 days opening, I have to re-dial in my grind settings to grind finer or else the espresso comes out too quick. Does this happen to anyone else?
