in my experience the machines are rarely serviced or cleaned and the coffee is generally stale

funny thing is it the last thing you're going to consume at the restaurant and the bad taste stays with you 8)

I've been concerned about this for years, after having seen some coffee setups completely neglected at Michelin Star restaurants in the Bay Area as a wholesale trainer for a specialty coffee company. There are a few restaurants that come to mind as having exemplary coffee service, chief among them Canlis in Seattle. I'm sure there are more out there, but coffee does seem to be an afterthought for most.
