What baffles me is that they can't be set to whatever temperature I select. That much money and I have to pick one of the temperatures they choose?

I've wondered the same thing. Doesn't seem like it'd be that much of an engineering stretch to make them adjustable, yet AFAIK none of their models offer it. Having said that, I find 208 is a decent compromise for my needs. On the rare occasion I might need a bit more flexibility I'll bring out the Stagg EKG.
