Changing brew parameters can affect taste .....mildly.
It can accentuate or mute certain characteristics somewhat.

It cant remove them, or create whats not there.
If your not tasting it......its not there. Ime.

Have you tried a different water temp. up near 202°+?

This sums up your problem here. You might want to try washed beans if you are looking for pronounced acidity in your coffee.
