Trouble dialing in espresso

I have had a great deal of trouble dialing in an espresso. Recently obtained my gear and I have been trying to trouble shoot this problem.

Water Temp: 200F
Triple basket (provided with machine): 20g in with 41g out in 25-28sec

--> Fast and sour quite a bit
I started at 20 on the Niche, I was thinking of making the grind finer, something like 18 or 15 ?

Any ideas would be greatly appreciated ?

Sounds like a plan!

I don't know how full the basket is, but you also might try reducing the dose. If there isn't at least enough space above the tamped puck for a US nickel, you might be overfilling the basket.
