I haven't done the French pull, but I regularly brew using a CCD-style device, which involves similar contact between paper and water. The key is to rinse the filters well beforehand (just as you would do for a more traditional pour-over brew). If you rinse first, you shouldn't taste paper in your cup, only coffee.
