This is my grind size for an 8cup chemex with 52G, I am wondering if I should go finer or go more coarse ? I know I am risking over extractions but I'm trying to get the best taste with the most nuances.

The grind looks wildly inconsistent. A combination of very fine powdery coffee and large chunks. What grinder are you using?

Taste, in coffee, is rather subjective.

as in espresso, grind until bitter then scale back, using 700 g of water
