Today, I did the opposite to contrast the brew before. 850 micron setting on grind and a 16.67:1 ratio with only 2 pours and 205F water. It made good coffee too, but brighter and fruity with a cooked fruit and brown sugar taste versus the malt and chocolate of the brew before.

The last dozen or so messages have been about brewing techniques that have nothing to do with any specific burr set. This thread was supposed to be about the new SSP 98mm brew burrs. Like discussing how well they perform or how they compare to alternatives.

If you want to discuss brewing techniques it might be better to start a separate thread.

I can chime in with a useless subjective opinion.

I borrowed a set of SSP Silver Knight coated Pre 2015/Cast burrs (SSP cast, not EK43 Pre 15 burrs to be clear) that I used first in my EK for filter coffee (V60/Kalita/Kono/April small and larger brews) and then in the P100 both filter and espresso (longer ratio faster lower pressure shots). The guy I borrowed from got my Titus coated Brews in exchange so we could both try something different from what we own.

I got some very nice brews with them in the EK, the P100 as well, but I personally prefer 98 Brew to them, and in some cases preferred HU in P100 over the Pre 15 EK in side by side blind tastings, carefully dialed in to closest balance and TDS.

Cast deliver well extracted brews, balanced, sweet, but not as high clarity as Brew (or HU/LU) and a little soft (not weak or thin, but a little gentle presentation, not punchy) though easy to get too much dry bitterness if not careful. I much prefer SSP Pre 15 cast to the Mahlkönig coffee burrs that came with my EK43S, I sold those burrs as I don't care for them much.

The Silver Cast burrs had longer grinding times and more static than Titus coated Brew, and I also think the prebreaker design of Pre 15 isn't optimal for low speed P100 use, but it didn't stall with light roast for filter or spro at low-ish setting (setting 3 which is 580 RPM).

Was so nice getting the 98 Brew back in my EK!

So after trying HU/LU/ULF/Cast/Brew from SSP in my EK43S with my water, Brew remain my favorite filter burr. For spro I'm more torn and switch between my HU and ULF set at times, I like both for different reasons.

In the P100 all SSP burrs are good with some variation in presentation, especially regarding clarity and mouthfeel, they all can extract well. The EK with it's different design change the presentation a little vs P100 lower speed so I don't like much of them for filter there, a little too blended/muddy (especially ULF)

So you prefer the brew burr in the P100 rather than the EK, but you mount them in the EK? I assume that is because of a better espresso workflow with the P100.
Could you elaborate on the difference or taste when mounting the brew in the P100 vs EK.

I might actually prefer Brew in the EK over the P100 but I can't side by side, also yes I much prefer using P100 for espresso. EK get more retention with espresso use too, with Titus coated brew and filter setting retention is good with EK without bellows or RDT.

In general the EK has moved burrs a little bit more in the blended/complex direction compared to P100 in my experience, with ULF that's too much blending for me, but the Brew are such high clarity that I find it doesn't hurt them being in the EK. I think in the P100 Brew can be a little too extreme in some cases, even more demanding of perfect beans and technique. But I do enjoy Brew in both grinders. SSP Pre 15 I also liked in both grinders, maybe even better in the EK with those too.
