What am I missing with my current grinder setup?

I've decided to sell my current grinder setup because it takes up way too much space and suffers from mediocre workflow for single dose home use.

I currently have
1. La Marzocco GS3
2. Compak K10 WBC Pro barista
3. Mahlkonig guatemala

Espresso machine: GS3 feels nice but I can't quite get the milk steaming done correctly. Steam weirdly feels weak and more difficult than my previous HX machine.

Espresso grinder: Compak K10 feels much better for cafe use, as I dose single shots, and it takes a bit of work to get the ground out. Also because it is a conical burr, I really wonder if I'm missing out on clarity -- TBD. I do mostly use light roasts and drink straight espresso, but occasionally I use dark traditional blends for my lady, as she prefers low acidity coffees.

I'd like to get something like a Lagom P64, which I hear would give me much more clarity and for sure, better workflow.

Can anyone comment on these?

Brew grinder: Guatemala is an obvious overkill and I am getting rid of it. I suppose a P64 should be able to do just fine although specific choices on burr set supposedly should result in different results. Would appreciate any recs. Drip brew is definitely not a focus, as I've found that I only use it when my espresso machine is broken or in repair, otherwise brew drips once a week or so.

My GS3 was a steaming monster--in a good way if you want fast steaming. What pressure is your steam boiler set to? It could also be an occlusion in the wand or tip.
