In my experience, I have a preference to stepless grinders. The Baratza Vario intrigued me because it was not only an espresso grinder but could grind along the spectrum. This was great for my budget and space because I could kill multiple birds with one stone. I drink mostly espresso but do make other coffee: drip, cold brew, etc. I am also someone who changes their coffee beans all the time. I love to try new beans and new roasters. At any rate, when I was dialing in the Vario for a shot of espresso with some beans/ roasts I would find myself wishing there was one extra microstep, maybe I am being neurotic, but I felt it was just that little bit off. When I finally took the plunge and upgraded and began experimenting with higher-end commercial grade grinders I was able to hit that missing microstep. Not to mention that the consistency of the grind was far superior to the Vario. But I keep changing them up, trying them out and seeing which one suits me best.

One think that I think Takeshi might have been trying to get at is that coffee is super subjective, and everyone has their preferences. Of course people love to speak in generalizations and hope to get as much help as they can get to produce the elusive god shot, but as they say one man's trash is another man's treasure. You have to find what works for you and what your preference is. So perhaps finding a cafe that produces a good shot of espresso or a good latte that YOU like is a good place to start.

Bottomline is I never think it hurts to upgrade or try something new, perhaps it will suit you better or produce a shot that checks more of your boxes. You don't know until you try...
