I plan on only grinding coffee for 1 or 2 cups at a time. Are there any inexpensive grinders (electric or manual hand) that someone can recommend me? Thanks.

I've had good results with my Bonavita immersion drippper using a Capresso Infinity grinder. Offers a simple timer. Comes with either a plastic or stainless steel housing.
Between order and chaos there is espresso.
Semper discens.

Here or around here is the setting I use for Bonavita. Placed a screw on the lid ever since the my "tried to fill hopper with lid on twice disaster".

Your settings may vary slightly. You will just have to play with the dose.
Be sure to use chlorine free water. All the best. Don't forget to report back.
