I see folks on utube upgrading their Vario from the ceramic over to the steel. I was under the impression that the steel was good for coarser grinds, but not so good for finer.
The steel burrs for the Vario are made for slowcoffee thus a coarser more uniform grind and not for espresso.

Eric is right. The steel burrs are for brewing only. The ceramic burrs are for general use, but really shine for espresso.
