Today I added a Chemex 3 cup to my arsenal. it turns out that the vast majority of Chemex propaganda online refers to the larger models.

Does anyone have advice or techniques for brewing on the baby Chemex?

Thanks. I coincidentally stumbled upon that George Howell source on reddit about 5 minutes before I saw your post.

Later today I plan to do some brewing - given that my Ruby subscription arrives in the mail today as expected.

I've found that the mouthfeel of the coffee brewed on this chemex is incredibly smooth and creamy (perhaps due to the thick filtration). It's definitely different than what I am used to, even in comparison to the kalita wave. For example, it's almost like a nitro tapped beer in comparison to a regular tapped beer.
