Astoria Single group restoration for food truck

Hi all.
I've just picked up an Astoria Single Group as a learning experience for rebuilding/maintaining/using a commercial coffee machine in preparation for possibly opening a food truck which also serves (hopefully) good quality coffee.
Whilst researching online I stumbled across you guys, and specifically, the beautiful job that djmonkeyhater did on (what appears to be) exactly the same model I have just acquired (here is the thread: Astoria 1 group renewal).
Here it is, and it's currently hiding in the workshop as I intend to rebuild it with my lovely other half, whose food truck it will be
Tonight I'll start with taking the side panels off and giving it all a bloody good clean, then working out how the heck this thing works so we can rebuild it...
In related news, the guy I bought it off also sold me his commercial grinder, which will be getting the same treatment. I'll try and keep you guys updated, in the hope of some help
