I don't think it can be a bad thing, with finer grinds you want to make sure that they are all wetted, I tend to add the total brew water then a quick NSEW stir the full depth of the pot. No further agitation after that point.

Wouldnt three minutes post bloom be too long for a near espresso grind?

No, not usually, depends on what you're trying to accentuate & ratio (I'd go stronger the shorter the steep), but there can be phases of good flavour. Extraction slows a lot after the initial wetting & mixing. A bloom with a small amount of water probably doesn't have the energy to do real harm, but I'd prefer to get all the grinds wet & start brewing as soon as possible. The first signs of bitterness don't always mean game over, you can often sit this out, especially if the bitterness is due to suspended solids/oils at the surface layer, rather than extraction (time to let the solids settle can help).

I worry more about being too coarse.
