I think the machine's gauge is not accurate and I was getting a very low brew pressure with 10 bar on the gauge.

I'm very confused, but the espresso tastes great.

I suspect I have a bad set of burrs on my grinder.
I already ordered a new set, will report once I install it.

What's the connection between bad burrs and inaccurate gauge?
It seems to me that you are changing too many variables at the same time, and this is probably the cause of your confusion.

The gauge has nothing to do with the burrs.

I've returned the machine to its initial state and started changing from there. This made me realize my burrs are probably very worn (or bad, I bought non-original Mazzer the last time) as I was only able to get good shots with a very fine grind and a high brew pressure.

grinding consistency is really a key factor to get good extractions
if you have doubt about it, you are right in buying new burrs
let us know when you have replaced them

Is this pressure as seen against a blind filter? Or during an actual shot? Against a blind filter it will be higher, but generally too low brew pressure won't give you overly burnt flavors. In my experience this has more to do with the actual coffee, water or too high a temperature. I would try an extra long flush in the meantime before your new burrs arrive.

The thing that made me realize I have a bad set of burrs is the brew pressure during an actual shot compared to a blind filter. They are practically the same at 10 bar and 11 bar (12 too actually).

I think my grinder is producing way too many fines, which slow down the flow. At a very tight grind and a low pressure I'm getting the best flow I possibly can, but the shot is way overextracted.

I don't way to do any more modifications right now, the machine is very close to its original settings. I will check again when the new burrs arrive.

I was right, my burrs were bad.
Replaced with original Mazzer burrs from ebay.

I still need to break in the grinder, but espresso quality improved dramatically.

My current settings are:
OPV: 11bar
Boiler pressure: Turns on at 1.1, turns off at 1.3, rises to 1.35
Dose for a double - 12.5 - 14.5 grams.

I like the machine very much, absolutely recommended.
