My wife came up with a simple but delicious coffee shake the other day. Maybe it seems obvious but I had never thought to try it: she simply blended vanilla ice cream, a little caramel syrup, and some iced coffee. Basically like making a milk shake, but blended with coffee instead of milk. The coffee was some japanese style iced pourover from the day before sitting in a mason jar in the fridge. I'm not going to claim any subtleties of origin character or anything like that came through, because by the time you add ice cream and syrup they're pretty well masked, but I will say it was the most flavorful coffee dessert I've ever had. Don't use your favorite beans, but give it a try sometime.
