All though I no longer roast on the Quest, I dont believe its capable of speeding up that fast. In order to have 6 mins of drying, you have to start with a low charge temp. Then in order to get to first crack(which was about 70 to 75 degrees after drying) you would have to pump a lot of heat into the roaster. The quest isnt capable of that, heck Im not sure many gas roasters are capable of that. In order to hit that profile you would need a fluid bed roaster with a lot of power. The fastest i was able to go on the quest was about 22 degrees a min, so if your lucky you could hit a 3 min maillard phase.
