Reduce resting period of roasted coffee? - Page 2

Sorry, I don't mean to offend. I was actually thinking of a lady friend of mine who owns a local coffee shop and roastery. I had to stop going in there as she claimed to be an Alchemist as well as an award winning roaster. The 9 to 14 days you had to drink her coffee was like rule number one on her chalk board. Thank god I roast my own beans now and don't have to listen to a sermon every time I walk into her shop. I still enjoy her company now and then.

You just have to go with the bean and degree of roast. Some beans will work great in 4 or so days (Malabar, Sulawesi), some will work great in a week or so (most beans), some will rest in a week, but shine in 2 weeks (dry processed fruity Ethiopians).
