Yirgacheffe single origin espresso brewing temperature?

Just picked some up from my favorite spot here in Dallas, and the barista recommended I try 18g and set my PID around 210 to start. My machine is a Gaggia classic. Anyone working with this bean?

That sounds a bit hot. I'd start at 198 or so.

I assume you have a pid unit on your classic?

I have the same setup. Try pulling the shot with the stock settings. The pid should be set for 216 degrees. Start there and see how you like it. I have pulled some SO Ethiopians here with the stock pid setting and gotten very good results.

Ok I'm at 214f now so I'll give it a whirl. I love this stuff, albeit from the UNIC commercial machine and Mahlkonig grinders they run. I don't even use Turbinado sugar or half/half with the Yirgcheffe. Very smooth and interesting taste.
