Weird tasting coffee after descaling

I'm having a rough time finding the cause of this since it's the first time it happens to me.
Last week, I descaled my E61 machine like I always do. Since then, I have like a weird burnt plastic taste to all my shots.
I tried to rince the machine again and again, changed the water in the tank, backflushed the group with agent.
Tried 3 different beans and still ...
It's been like this for a week now and it's not going away.
I have a Rocket Cellini Evo V2.
Using same bottled demineralized water.
Please help me out !

My general advice would be not to back flush or put any other cleaner through for a while. I have a general habit that over cleaning or descaling machines can do more harm than good.
I would also investigate any plastic parts you can get to in your hx loop, and see if they were affected by your descaling solution.
As a quick test you could also try a few different kinds of water. If your tap isn't too bad it's not a bad test, filtered or different brand of bottled.
