Sorry to bring up an old thread and sorry if OP has already moved on from this, but it sounds like the Vario just needed those shims that Baratza offers, especially if it was a 4500 serial number or below.

As far as spritzing with the VST, I also experienced this quite a bit but I remedied it by making sure my grind was finer than normal, distribution was nice and level, and tamp was a little firmer than I normally do (normally, it is less than 30lbs). Also, I felt that beans that were too fresh resulted in major spritzing.

After a couple of months playing with my three VST baskets I found the 15gm basket harder to work with than the larger two (18gm and 22gm). I'm not sure why this would be but I find myself using the higher dosed baskets and resorting to my LM or Synesso baskets for lower dosing.

Well I gave up on dosing to "spec" - overdosing simply tastes better! Now using the 15g basket and except for the finer grind treat it the same as any other filter basket as far as my prep but manufactured better than anything else on the market.

Don't know in a home environment whether it makes any difference at all but it was an interesting journey!

Of course, I ordered a couple of VST baskets to try. After all, I have to keep up with the Joneses. But I resisted the Foam Knife steam tip! :D


Funny, when trying out my brand new VST this weekend I coudn't help think of Monster "High Speed" HDMI Cables. :) Anyhow, my findings thus far with the VST are this... it's definitely a filter basket.
