Using the E61 Thermo Adapter on Andreja Premium

Hi, I just started using the Thermo-Adapter with my Andreja Premium which I ordered from Chris Coffee. I have to say that this is a great tool. I've been experimenting with it using the Machristay.
What is the ideal brew temp for this blend?
Is the temp at the puck generally cooler 4-5 deg than the reading even during the brewing process?
