Triple layer cappuccino help

Postby alanmushnick on Tue Jul 31, 2007 5:22 am

How can I get one of those triple layered cappuccinos to work? I think there is steamed milk on the bottom, espresso in the middle, and foam on top. Despite multiple attempts, the milk and espresso won't layer out. Which gets poured in first? Do I pour in any special way? Down the side of the cup? I did post this on coffeegeek (link). No one answered.
Thanks!

Do you NEED to have three individual layers?

hey
I don't NEED espresso, either. my parents survived nicely with a percolator. I was trying to kick up the presentation of my cappuccino's to impress my friends. It looks cool. that's all.
any suggestions, now that I have explained myself?

Since nobody else has answered, I'll tell you how I *** think *** it's done. You'll need to pull your shot into a shot glass, or preferably a 3 oz stainless brew pitcher, because it has a spout. Steam your milk, and pour your milk into the cup. I assume you're using glass so you can see the results. Give the milk a minute to settle so you have steamed milk on the bottom and foam on the top. That's two layers. Now very gently pour the espresso through the top of the foam. The espresso should pour through the foam layer, but it will be hotter than the steamed milk below (or it should be!). If you pour it gently, it should "pool" at the top of the steamed milk layer, and a third espresso layer should develop between the steamed milk and the foamed milk.

You can do this much easier with an iced mocha or latte, with a little foamed milk on top, because the milk/ice bottom layer is so cold. This might be a good way to practice. Makes geat looking iced mochas or lattes in a large Bodum Pavina glass.

Of course you don't *** need *** to have great looking layered drinks. But it is fun.

Get thee to a bartenders supply house (restaurant supply will usually have bartenders tools) and get a Guinness spoon, for pouring Black & Tans, or just pour the espresso over the back of a spoon angled to deflect the espresso down the side of the glass. The espresso will settle on top of the milk layer.

Pour the milk in the cup first. Let it settle. Pull the espresso into the milk.

Sometimes it helps to add a little bit of very hot water (from your tea tap) to your espresso into your stainless brew pitcher.

You didn't say how you did it, nor did you post pics! We are all sorely disappointed... ; >
