Just bought a EP Bottomless PF with triple basket. The handle feels wonky. Anyway way to remove it and also remove my Rancilio organic handle and swap?

No.
Rancilio uses a square shaft that runs the length of the handle and bolts on through the cap on the end of the handle. It is unique to them and a pain in the butt to make replacement wood handles for. The normal configuration would be a M10 or M12 stud molded into the handle which screws into the portafilter boss which is probably what your bottomless is. The two are completely different animals. The handle on your bottomless may simply be loose. They are normally given a heavy squirt of locking compound then screwed together which glues them together unless you heat it with a burner to get the compound hot enough to break down. They they unscrew easy.
