On Christmas Day I served lattes and capps for brunch and as we had eggnog on the table someone wanted to try it in their espresso so off I went to the kitchen. I went to the Delonghi and set up the steam and to the fridge for cold eggnog . When I tried to steam it for the espresso I tried to follow the same method as with milk and when I thought I had smooth foam I dropped the wand to heat and next thing I had a pitcher of thick custard that wasn't leaving the jug with out a spatula .

Any help is welcome

I cut 'nog 50:50 with whole milk for steaming at the cafe.

Mike , is that using store bought eggnog or homemade eggnog?

Also steam to a lower temperature. When I steam half 'n half for breve machiattos I always find it needs to be keep to a lower max temp. For me that's the 120 - 130 F range rather than 140 to 150 F.

Cutting it with milk - as advised above - should help... or you could just add more bourbon :wink:
