Skim milk produces much better microfoam than non skim milk.

I actually find the reverse. I usually use 1.5% skim milk and can do well with it. Occasionally when I run out and use Full Fat milk, as long as I inject a little more air into it, the results are better despite my usual preference for, and therefore practice with, the former.

I too find fattier milk to be more forgiving than skim. Skim milk will create bubbles easier, but I find it wants to separate easier and I find it less forgiving with technique. I can create nice microfoam with skim and low fat, but the texture I don't find to be the same as with whole milk. Whole milk seems to steam up sweeter although i don't know that the sugar content is different so may be my imagination.
