Shot is too fast

Postby frank on Thu Sep 30, 2010 6:56 am

I use a Gaggia Classic and a Gaggia MDP grinder. I have my grinder set at 8 and my shots are still pouring out in 10 seconds or so. I tried stamping harder(measured with a scale to start) to no avail. Should I just keep cranking up my grinder and grinding finer until I slow down the shot? Thanks in advance.BTW, I did a search and ther is so much info I started to get a little confused so I figured I would just put it out there for somebody's straight advice.

Yes keep the dose the same, say 14 grams and grind finer until you get proper shot volume and timing.

I recommend getting cheap 0.1 gram scale so you can weigh your doses and also use brew ratios instead of imprecise liquid volume.

Thanks for the reply. It isn't enough to just pour coffee into PF and level it off before tamping? I have seen that done without the weighing.

Yes, assuming the coffee is fresh (4-7 days post-roast). By that, I mean the roast date, not when the bag was opened. Stale coffee will pour quickly unless the grind is set ultra ultra fine. See Brew time too fast for more discussion.

It depends how consistent you are. Pour speed will change with small variations in the dose weight. Scales are cheap and eliminate variation of a critical variable.

Yes, but, how do you know how much coffee you have used? Amount of coffee you use affects shot volume, timing and flavor. Unless you are constant in how much coffee you use, and you can't be without scale, you will be most of the time chasing your own tail. :D

If everything remains the same, your dose is within 0.2 grams every time, tamp is the same every time, distribution is even every time, then yes, just grind finer. There are a thousand other possibilities, uneven distribution, too much coffee in the basket, too little coffee in the basket, channeling, old beans... but if everything else is correct, grind finer.
