Removing Crema

I was reading through James Hoffmann's blog and came upon his first video blog where he suggests removing the crema from espresso. http://www.jimseven.com/2009/07/06/video-1-crema/ I've done a search of HB and can't find any comments.

Is this something people have experimented with? I'm assuming it didn't stick because I never read about it here.

Thanks Dan. I don't know why I can never perform searches that work! I searched "Removing Crema" and didn't find the thread.
