Quick question: 21g coffee = 2oz espresso?

In my triple basket (21g)... how many ounces should I (generally) be pulling? 2oz or more?

I've always understood that a double basket (14g) yielded between 1.7-2.0oz? So does a 21g dose and a 2oz espresso constitute a ristretto?

I realize there's allot of variables in this... but I am just trying to get a general idea.

To say the least - you are being very kind. I suggest you invest in a nice digital scale and initially shoot for 42 grams of beverage from 21 grams of coffee - see this: Brewing ratios for espresso beverages.

A ristretto would be more like 21 grams of beverage from 21 grams of coffee.
