you may be missing the point. this all takes place within a phone app that is built around the vertical phone orientation, or portrait mode.

there may be a future interface overhaul to allow landscape mode, but the current UX engineers see that it's most useful in portrait mode --as are most useful phone apps. the aim of periscope.tv is interaction and community, not solely video consumption.

If something takes more than 40 minutes, consumption is a big part of the equation. VVS is still stupid, regardless of what UX engineers think. Also, primarily the content creates the interaction and the community, not the app in which the content is created, and definitely not the choice for VVS.

In any case, the focus on underextraction was an eye-opener for me as well. Apparently it's the root cause of everything bad in espresso.

I find it interesting that he says "I find it quite hard to extract enough" and then is using 20 grams. Not clear why he doesn't just use a thinner puck (eg, 16 grams) to get a higher % extraction yield.

He says that non precision baskets clog up when you grind fine enough - I haven't seen that.

What's your experience with dosing 16 g in a VST 20 (or a similar situation)? I think TW's logic is just to follow VST's recommendations regarding dosing.

I like to dose 17.0 g in a VST 18 to allow more headspace and a finer grind. I don't have issues with channeling.

Is this because his shop bases their drinks/shots off a certain quantity of beverage and needs to dial things to that volume?

This video is handy as it has a lot of details all in one place.

My favorite comment was towards the end, about making espresso at home.

As for VST baskets- from what I can tell with the naked eye (okay, with corrective lenses at this point) the 16gm and 18gm VST baskets are only different in the depth of the basket. So dosing a 20+gm basket with 16 to 18gm should be pretty close to using the smaller basket, with the exception of added head space. I'm sure that would make a difference, but how much I do not know.

I think I missed what VVS is somewhere. Can someone clue me in? Thanx!

Hole size also varies depending on dose so that grind is similar for each.

The funniest comment I've heard about VST baskets is along the lines of "if you use one and are more consistent with dose/grind/leveling/tamping, you get more consistent results".

Along similar lines, I've found that if I do *anything* and also re-dial-in all my parameters, I get better taste.

Ah, yes VVS. Was thinking it was a VST App or something!

Fortunately you can just listen to that video and get just about everything out of it. Same with the roasting video he has done.

Ha, yes Jon. More consistency is better-er! I love my VSTs but they are fussy.
