Need help steaming with La Marzocco GS3 w/ stock no-burn wand

Postby menghazard on Sun Oct 16, 2011 1:32 pm

I have been trying to steam perfect milk for latte art, but i can't get it to really fine bubbles. I'm providing this link of what i'm aiming for http://www.youtube.com/watch?v=-RpZAuLnIgw.
I can't seem to get to this stage with my GS3 with no burn wand. I can do it at the restaurant where i work at. The steam wand at the restaurant is not no-burn so i'm not sure is it because of this reason that i can't get really fine microfoam. I have tried many technique with my GS3 and I just can't do it. I set my steam boiler pressure to 1.5 bar, but when i start steaming the pressure drops drastically. Is this typical for a 3.5 L steam boiler to go down in pressure this quickly? I'm thinking of buying a burn me wand in order to get fine microfoam. Please really need advice. i went thru 8 gallons of milk in 2 weeks already lol.
thanks you for feed back!

How far does the pressure drop? If you start out at 1.5 BAR, it's not unusual for the pressure to drop .2-.5 BAR. It shouldn't drop much lower than 1.0 BAR, though. Try increasing the steam boiler temperature so you get 1.7 BAR at idle and see if that helps.

I happen to have the burn-me wand and can produce perfect microfoam as long as my technique is sound. Some feel the insulated no-burn wand gives you slightly wetter steam and not as good microfoam. I don't know if that's true. Many people report being able to steam successfully with the no-burn wand, so I would only replace it as a last resort. Instead, you might try a different tip. I use the EPNW 4-hole tip, which works well.

Another thing you can do is practice using one drop of dish soap in water instead of wasting a lot of milk. If you can steam the dish soap/water, you can steam milk.

thanks for the reply Dick. Do you mind posting a video of you steaming the milk with your burn-me steam wand? I can make decent foam enough to make latte art with no-burn wand for sure but it can certainly be better.
