Microfiltered milk

Postby nixter on Thu Feb 17, 2011 12:30 am

Anyone tried this? A lot of the major dairies are producing this. The process results in MUCH less bacteria making for a longer shelf life. Plus it supposedly has a smoother texture and taste. I'm curious to try steaming some.

Here's a blurb from an article I read about it..
"tests have shown that the microfiltered milk contains less than one bacteria per milliliter compared with several hundred bacteria per milliliter in conventional milk. Thus, the microfiltered milk retains its extremely low bacterial count throughout most of its 30-day shelflife, compared with conventional milk in which bacteria levels rise more rapidly during its 12- to 18- day shelflife until it ultimately spoils."

Is milk spoilage really an issue for you? I use microfiltered milk because it's usually on sale. I've never really compared it to the regular stuff. Tastes like milk.

I thought one of the big issues with milk is that once you open it, you expose it to bacteria and it begins to spoil. The filtering should help keep it shelf stable, but I don't think it'll help for spoilage once you open it, especially if you have kids like mine that like to leave the milk out on the table.
