Methods for toning down powerful coffee beans for the wife?

I quite like them, they have a major kick but they are a bit strong for the wife. I'm producing quite close to a double maybe 1.7oz and this is for a cappuccino in a typical cappa cup suited to doubles. I am curious if there are techniques to tone down the kick a bit and mellow it out for when I pull her shot.. I suppose less volume more milk is one way but i figure that would dilute the strong taste and make for a milky drink..

You can try a start dump.... let the first few seconds go to the drip tray and then place the cup.

Now that you found a blend that makes you happy, wouldn't it be nice to find a blend that will make her just as happy? :wink:

Jeff, could you be a bit more specific about what you mean by "kick"? If it's bitterness, perhaps it is something that you would also like to reduce?
