Help with frothing milk - Bezzera BZ10P

Postby kevinma on Sun Apr 03, 2011 8:21 am

Hello, I am looking for some help with frothing milk using my new Bezzera BZ10. The wand has 4 holes and the steam output seems very powerful. All I seem to be able to achieve is boiled milk. I've read many of the how-tos and have watched some videos and I've experimented with trying the different zones. I initially was probably using too little milk but using a half-filled jug hasn't helped. Not sure what to try next...

These machines are some of the best for steaming you can get for the home. Unfortunately, they are not for beginners; the warm up period for a cappa is about 15 seconds, not enough time if you don't have precise control over the tip depth.

The tips can be swapped out for something slower; get a two hole, or even one hole tip until you learn. Alternatively, block two holes with toothpick ends.

Thanks Jim. I've read about the toothpick trick, but haven't tried it. I will give it a try.

What are you practicing with? Milk? Silly question I know but, you can practice with water and 1 drop of dish washing soap. Once you have mastered a fine microfoam with that, you can graduate to milk...and it's cheaper too!

I have tried a few tips with my BZ07, and I had the best results with a 4 x 0.9mm, which is smaller than the stock tip.

I too had trouble frothing when I first got my mini Vivaldi. What works for me is, pitcher third full, have wand straight out and angled up, with pitcher spout facing the wand lower just below the milk surface, rotate pitcher to the left so wand is on the side of pitcher, now start the steam and keep lowering the pitcher to hear the sucking sound till milk gets to 80 - 100deg.F. Then keep wand just deep enough to not hear the sucking sound to 140deg.F. Doing this should get you a good amount of froth which you can tweak your technique. If you get a big cotton ball in the milk what I do is pour the milk back and forth between 2 pitchers to combine it and thin it out.

I tried plugging 2 of the 4 holes with toothpicks. It seemed to help a bit although I still ended up with boiling milk. One thing I think I was doing wrong was having the tip in the milk at an angle. I think it would be best to have it vertical given the fact that the wand tip has 4 holes at N, S, W and E. Haven't tried that tweak yet. I am going to get a couple more frothing tips to experiment with. Thanks for the tip about using soap and water.

Bezzera's are very Elektra like in performance. Do not bother surfing the tip or tilting the pitcher. Just put the tip of the steam wand about 3/4 of an inch into the milk and open the valve. The milk will start rolling in a matter of seconds. You may want to up the amount of milk you are using just to give yourself some breathing room, 4 or 5 ounces would be plenty. Make sure your milk is ice cold and keep your pitchers in the freezer.

Bezzera offers a two hole tip for the BZ10 and the Strega - check the parts book. Better yet, check your machine's boxes - they MAY have included it.
