Grinder setup

my Macap M5 is finally here!

however, i do produce much better espresso, but still not the best. i have adjusted the grinder according to the guidelines found in the resources. i have two questions:

0) my setting is around 1.9 (less is more fine) out of 10. is it possible that i need such a fine grind?
1) my pressure is at about 6 and is pretty constant. is it high enough?

the machine is Bezzera bz07.

Congratulations on the new grinder :)

as for your questions

0) no answer here, the coffee should be ground to such an extent, so that the starters guidelines (below) apply
1) starting guidelines: up the pressure to 8,5, and grind coffee fine enough, to achieve:
- if you use single basket: 8 grams of coffee in it, after you switch on the machine, you get 15-20 g of espresso in 27-33 seconds. (taste it, whether you like it so, then you can try the next stage)
- if you use double basket: 14 grams of coffee in it, after you switch on the machine, you get 30 g of double ristretto in 27-33 seconds.

Of course, WDT, digital scale with 0.1 grams resolution is welcomed. And, take the above only as a starting ground.

EDIT: I got incorrect numbers in 0), now thanks to HB they are corrected. Also, if you use double basket, you can skip step 0) and go to 1). It is much better way, imo. As for espressos and as for cappuccinos and caffe lattes later on. :)

You should grind about 5 or 10 pounds of cheap, not oily supermarket coffee to break in the burrs

The ring on a Macap can be rotated in 120° increments, so the actual number is meaningless.

Typical espresso range is around -¼ rotation from zero.
