Grind fineness and sweetness

Hi guys

I'm new to forums. I have recently (3 months ago) launched myself on a quest for creating great espresso. My setup is a Gaggia Classic & Ascaso i3 mini. I was using some local espresso but it got to be a bit costly so I am now using Filicori crema delicato. The thing that I am noticing with my set up is that I get sweeter espresso when I use a very fine grind and tamp very lightly. Has anyone experienced this. I can get a nice looking shot by grinding less fine and tamping harder, but it consistently tastes better the other way. Any advice? Thanks!
