Your Virtuoso has the ability to be "readjusted" to allow for more steps in the fine grind region. (email Kyle or Joe @ Baratza)
As Jim suggests, this is a learning process, and EVERYONE here has gone through the agony to get to the ecstasy!

BTW, a manual grinder is another quick, and wonderful fix.

Wow! This thread seems like a distant memory.

The trouble with the grinder seems to be the large variance between steps (10 sec.), even after readjusting. I've found that if I grind at about "5" I get a decent shot. 1.5 oz. in about 30 sec. After that the shot starts sputtering all over the place, and goes blonde. Fresh beans help, but only a little in this case. The trouble with the machine is that the brew pressure is way too high (11 bar or so) and the OPV is not adjustable. I can add an adjustable OPV, but haven't got around to it. My solution is to updose (23g.). That's the only way to get a decent shot that doesn't start sputtering halfway through.

So, basically, what I get is what I get. No way to dial in my shots any more than I have. That said, I can pull something very close to the espresso I drank at Artigiano in Calgary a few months back.
