Espresso Granita: or what to do while pulling (extra) shots all afternoon long

Postby matadero210 on Wed Apr 11, 2007 11:42 pm

Hi All,

I wanted to share a recipe for what to do with all the learning/training/experimental pulls. I researched this as a result of the PID Pavoni I built (see Positive pressure, PID Pavoni: world domination begins). To really understand the machine, I bought a 2# bag of cheapish Trader Joe beans and started pulling. But what to do with all the excess espresso?

Basically, just add sugar and freeze. Both the sugar and the emulified oils keep this from freezing very firmly. The stuff is great.

Anyone else figure out something to do with all the undrinkable shots?

enjoy,
raj

Add some water, a bit of simple syrup, a dash of salt, a bit of vanilla extract and a very small amount of chocolate syrup. Freeze in ice cube trays and use the cubes to make blender drinks by just tossing in some milk with the cubes. It's a good idea to punch up the flavor by adding a fresh espresso shot or two before blending.
