I'm trying to figure out the correct timing for using my vac. Does one include the "gurgling" after the water has gone south or just up to the time the water disappears from the upper globe? The "gurgle" can add 15-30 seconds to the time.
I have a Bodum e Santos- Bodum's electric vacuum brewer. I'm assuming you're using a standard vacuum brewer where you supply the heat.
The e Santos is kind of cool in that it has its own heating element and a 12 cup capacity. Not cool is that if the carafe is out of level in any way or if the funnel is in too far the automatic thermostat trips too soon and the brew underextracts. You've got to fiddle with the thing and I ended up using it like a manual after a while.
To get to the point, I found that anything over about 45 sec of gurgling was a good time to stop the extraction. Personally, I liked about a minute and a 1/2 but I would say after a minimum amount of gurgle time it's a matter of taste.
