Does condensation usually form inside of a taped valve bag when allowed to fully defrost to room temp before opening? It seems that would be the only time in this process that condensation could be introduced. Maybe it does, and if so I would agree that re-freezing beans with condensation on them is not a good thing. I've never noticed any visible condensation on the beans when defrosting in this manner, but of course that does not mean it's not there.
Other than that, the freezing process I've described is pretty standard (i.e. transfer from valve bag to mason/canning jar). I suppose the merits of freezing in general could be debated, but that is not what I intended with this thread.
