I was searching for an app with an elegant GUI that allows you to save brewing variables and taste notes for each coffee you'd brew
But i can't find one (an android user here)
(BTW would be better if it was free)
Why are most of those apps on iOS????

It could be as complex or as simple as you want. It's the choice of the barista.

Why not build something yourself in OneNote, etc. Some sort of spreadsheet, saved to the cloud with cross platform support.

You can use a Google Form for that if you simply want to collect data conveniently and review it later
