There is no one dose fits all. Dosing below the rim of the basket may be required for the optimal flavour of a particular blend. That is were you need the scale. You can also use different baskets. I have a variety of makes and each one has a different neutral dose (fill to rim and level). If you are trying to jam 20+ grams in a basket you may need to jump to a triple basket. Those deep triple baskets may also require a bottomless portafilter.

Yes - more often than not the "triple" baskets will require a bottomless PF. I also find that sloping walls on a double basket can mean the need for a tamper that is slightly smaller in diameter. The full size Reg Barber that just clears the edges of my LM double basket will not tamp down far enough if I do a 14 or 15 gram dose. I have a second tamper of slightly smaller diameter for that purpose.
