58mm basket vs. grams of coffee!!!

Hi,

My new Ascaso iSteel Duo Prof Tronic comes with this 58 mm filter holder. How many grams of coffee should I had?

Is it at my discretion? When I had 2 scoop (the plastic scoop included with the machine from Ascaso, with I suspect is 7 grams a scoop), there is lots of space between the tamp coffee and the top of the filter holder.

Right now, I'm over fill the filter with coffee, and use a flat object, like a knife, to remove the excess coffee.

Is this a good practice? About the grams of quantities use when doing this, I really don't have a clue. Should I worry?

Also when talking about brewing time, if 14 or 16, 18 or 20 grams of coffee is use, does it change the brewing time?

When time the brewing, do you start when you activate the pump or wait for the first drop to come out.

When using more coffee, like 18 grams for example, do you aim for a larger quantities, like 2 ounces?


I'm new to all this and need help for producing good result.

To elaborate on Jim's point, please peruse the Recommended Reading in the FAQs and Favorites. It may take an evening or two of reading, but will provide you the base foundation you'll need to ask the "right" questions. The forum search tips may also prove helpful. For example, I entered "When time the brewing, do you start when you activate the pump or wait for the first drop to come out" just as you had typed in your post in the site's search page (the first field uses Google's search engine); it led me straight to When do you start to time the shot?

what is 35 grams, the weigh of the espresso shot in the glass?

No matter the dosing, we should start with this rule of 27 seconds from the time the pump start?

If I understand this post, the distance between the ground coffee before brewing and the screen does not matter?

I have a hard time having a dry puck. From what I read, the distance between the dose and the screen should be very limited if I don't want a wet puck or soup in other post.

Thank you for your help. Tomorrow I will go and buy a scale...

Reread the post: You are dealing with a beverage, not a home improvement project. All the rules are based on getting the taste you want. So taste the espresso and decide whether it's too sour, bitter, strong, weak, etc. then adjust whatever you are doing.

Jim's right.

Examples of more important considerations: Is the coffee fresh? What coffee are you using? What is the dose in grams? What is the volume (or weight) of the resulting espresso? How does the espresso taste? Do you own a bottomless portafilter? How do you dose/distribute? Are you using a portafilter with pressurized basket? Could you post a video of your preparation technique?

Don't worry about dry pucks. If you're really curious about it, search the forums on "dry pucks" or "wet pucks" or even "sloppy pucks" for plenty of useless discussions of puckology.

It makes me understand about dosing.

I just bought my scale. Ready to test and follow your killer tips.

If I get this right, no matter the dosing, brewing time should be around 25 seconds?

The SCAA espresso competition standard allows for a range of 20 to 30 seconds. There is no hard rule on how long the extraction should be. Even Al's Rule is more of a guideline than a rule.
