All sounds good, except it only yields 1 oz...

Do I change grind? Dose? Or both?

How does it taste? If it tastes good then don't change anything. If it doesn't then you should make changes based on taste.

I drink cappuccino mostly and it tasted fine that way. It was bit bitter for me as an espresso.

In that case you might try to coarsen the grind and updose. What temperature are you pulling at? Alternatively you could try decreasing the temperature.

I am using counter culture coffee forty-six that was roasted 6/7/16.
I'll try coarser with 18 gram route first, I have HX machine and still going through Dan's post on HX temp adjustment.

I find that my volume for a given weight will change based on the amount of crema. Lots of crema and I get 2oz. less crema and I get 1.5 oz. I'm guessing you don't have a lot of crema in the shot you pulled otherwise you would be closer to 1.5oz instead of 1oz.

I think there are a couple possible reasons for this: 1) beans are getting old, 2) grind is too fine.

You can try grinding a little coarser and updosing. You can try fresher beans.
