I have been experimenting with doing what you may call a filter roast to pull shots of on the EK43

I am hitting first crack around 380f and anything dropped much past 400f and 22% development time tastes very roasty on the EK. It still tastes great on the K30 or a non espresso brew methods.

I'm working with 200g batches. It could be a mistake I made, but 225 and 250g batches tasted a little smokey.

Do any of you roast on the quest for big flat style espresso?

I recently got a small vacuum that can get any chaff left under the drum between roasts and also added a exhaust vent tube to a vent hood. It really helped reduce the smoke from my Quest M3 roasts, almost completely smoke free now.

Have you tried smaller roasts. I find the M3 is really responsive to input and more predictable at batches in the 100-150g range.
