Espresso Vivace Vita

Hi,
Any suggestions for best brew ratio for Espresso Vivace Vita.
I'm thinking of using 18 gram dose with 32 gram yield in 25 sec. Temp 203.5
Pulled on a Marzocco GS3.

I think of Vita as a prime candidate for a traditional 14g double.

Edit: make that at Seattle Double. 14g and really slow

Are you pulling shots for espresso? Their Vita blend is what they use for milk drinks, Dolce for straight espresso. They definitely pull Dolce *really* slow - like 1oz or less finished volume. Vita a little less so, but they pull them with pretty large doses as well (18g or more).

My experience at the Vivace shops (and the shops of people he sells to) is that you get about a thimble-full of espresso.

David's protegee follows suit at Scarlet City here in the east bay. Very, very tiny shots. But they pack a wallop of wonderful flavor and mouthfeel. I love the niche that she represents, because to me, espresso should be like ice cream; I'd get tired of only one flavor/style rather quickly.
